I'd be super concerned that the hot water would cause the chemicals in the plastic to leach into the water and corn. Now if the cooler were lined with metal, then that'd be a different story.

We do a similar thing but with a old stainless steel milk can. It works with that thing just fine.

So I wonder if putting a metal tub in the cooler first, filling with corn and hot water would do the same thing? The cooler is just for insulation.

Agreed about the plastic. It seems to be a sound cooking theory though. I'm thinking instead of a cooler, use a large ammo can. Something used for ordinance in the 20mm range should do the trick. They lock up tight and are all metal.
