"But what America’s Cinco de Mayo misses is the traditional food of Mexico, named to the UNESCO Representative List of the Intangible Cultural Heritage, a recognition given to only one other cuisine (French). And, nachos with refried beans, cheese wiz and jalapenos is nowhere on the list or in the country. Taco Bell has even tried opening up in Mexico but each time has failed, simply because no one will eat there."

After you have enjoyed authentic Mexican food, it is hard to go back to the Tex-Mex variety. Also, cheese dip was invented in Hot Springs, AR.

My wife's family has been in New Mexico for over 300 years. I, meanwhile, grew up in Detroit. When I first met my brother-in-law, we were living in England he stopped by while he was traveling in Europe. He mentioned how much he missed Mexican food and I, rather excited by the "good news," told him that Taco Bell had recently opened in London! He promptly and sharply let me know that that is NOT Mexican food. A few years later when we visited New Mexico, I more fully understood what he meant.
