I ordered some pink butcher paper after seeing Aaron Franklin use it. Anxious to smoke another brisket and see how it turns out.

        Sorry. Would have responded sooner but had to wipe the drool off my keyboard.

        If you haven't had the Austin, TX bbq tour I highly recommend it. I've had Franklin's, La BBQ, Louis Mueller's and many others in the area. Now if we can just get Texans to pursue the California Tri Tip and make it their own, I'd be in meat heaven...or a meat coma.

          I have not done the tour. Yet. The last time I was in Austin was for SXSW. Not an opportune time to get into any restaurant, let alone one with a great BBQ reputation. But I do plan to go back during a not-so-busy time.

          I am jonesing to try Franklin's. Which ones rose to the top for you?

            Franklin's by far with La BBQ and Louis Muellers a very close second. The brisked melted in your mouth at Franklin's and La BBQ. The ribs were awesome at Louis Muellers. Louis Mueller's would probably be easy to get into as opposed to the others. I waited 4 hours at Franklin's and 2.5 hours at La BBQ. I've had as short as a five minute wait and as long as a 15 minute wait at Louis Mueller's.

            Sausages at all three are excellent but La BBQ has some unique ones that put them over the top.

            My friend and co-worker bought Franklin's book and has been making his own briskets for the last couple of years. He lives in BC Canada. The verdict from what he kindly refers to as "freeloaders" is that it is very good. Makes me want to get a smoker and try my hand at it as well. He's going to give me the skinny when I'm up there in July.

              I have Franklin's book on my Amazon wish list. Might be time to go ahead and hit that "buy" button.

              Get a smoker. You will not regret it. I use a Primo XL, just one of many ceramic Kamado cookers out there. has a Big Green Egg before that. I would also like to get a good offset smoker as well and try my hand cooking in a more traditional way. For those new to smoking meat, I recommend starting with a Weber Smokey Mountain. They are very affordable, easy to use and do a fantastic job.
