My Spin on Joe's Kansas City Smoked Beans

I have had these and can attest to the awesomeness. (Note: Oklahoma Joe's is now called Joe's Kansas City.)
UPDATE: I got so excited when I saw 'Oklahoma Joe's' and 'baked beans' together in the same title, I didn't realize it was the particular cook's take on the dish, NOT the original recipe.

I need to figure out how to pare down this recipe. I love beans, but I don't want that many.

Yeah... that's a lot of beans. That said, I bet they freeze nicely.

My apologies, upon a cursory look through this article, I assumed because of the lack of mention of the restaurant that the namesake of these beans was an entirely different "Oklahoma Joe" altogether. I didn't realize he partnered with the other people to start the original Oklahoma Joe's and was a big part of the Kansas City Joes we know and love. Now I feel mighty silly.

Hah, no worries. To be honest, I just saw "Oklahoma Joe's" and "baked beans recipe" and got giddy. I didn't realize that this was his variation of it.
