This was oddly fascinating to watch. I think I am most amazed by the fact someone created the machinery to do this so easily.

I couldn't be that person on the line pulling out the misshapen chip or just tapping them down. Once you put one in your mouth, that would be it

I always just assumed they used specially shaped potatoes.

I actually clicked around a couple of links about this one and I found one where a guy was sensationalizing the fact that the chips were being made of a "slurry" of potato bits and water. In much the same way as bread is made of a "slurry" of water and flower...yeah.
