As someone who does a number activities outdoors and own a few pairs of boots (Justin, Lucchese for formal affairs), the best ones and best money I have ever spent is on some LL Bean Bean Boots. At $129 they are a great bargain and will last forever. I wear them year round even with shorts (as a 40 somthin' father I care a little less about impressing the ladies) They are great for jumping through streams and any sort of outdoors activity.
I have a slightly fancier version of the pair above with red soles and made of bison hide.

How well do they clean off mud? Around here we can get some seriously sticky mud that just refuses to come off. Because of that I have to be careful what type of tread I have on my boots. Just curious if you had dealt with that with these boots. They look nice but the sole looks like it has such small detail on the bottom...just had to ask. I'm in the market for some new ones but haven't bought yet; just dealing with a wet right sock till I do.

These are about as easy as it can get. I live in the land of very sticky NC clay. Yesterday was particularly wet and muddy. Although clay will stick to most anything I just use our hose outside and spray them off while wearing them. I have been well up close to the top of the laces and never had them leak. Or just have a clean off tray to stomp into before heading indoors. Also to note that the soles do not have a support shank like work boots so they are more flexible. This may be of a help when stomping around in creeks, rocks etc. But not the best leverage with a stiffer sole. Also take note of the sizing recommendations. They are sized for a thicker sock for cold climates. I would size down as the recommend if you wear medium or think/dress socks as I do.
