No, I'm a mere carnivore that enjoys steak. The article author is L.V. Anderson, and the artist is Jess Fink. You can file your criticisms more directly with them at the Slate website.
Nebraska and Kansas are spot on! Every steakhouse in Nebraska calls their ribeye a Nebraska Ribeye or a Husker Ribeye. And the burnt ends at Oklahoma Joe's are my favorite BBQ item in existence. Is it lunch time yet?
I've lived in Arkansas for 35 of my 37 years and I've never eaten rabbit, seen it on a menu or in a butcher shop. Just because there is a place in one town that sells it, doesn't mean the whole state gets "rabbit" as its meat. It would have been FAR more accurate to give us venison (deer). It would have even been more accurate to have assigned us 'possum (annual Possum Chili Supper in Monticello @ UAM), squirrel, or pork (Razorbacks? Hello?).
As a fellow Arkansan, I could not agree more. Why would they choose a small rabbit producer over Tyson Foods, one of the largest producers of chicken, beef and pork in the world, and also headquartered in Arkansas?
