    Spot on about the differences between cajun and creole versions and the need for cast iron. But, most old-time, true cajun family's will tell you that jambalaya is really just adding rice to any roux based dish to get another day or two out of the meal. Add a few things out of the garden with the extra rice, and you have yourself a new meal to get your family through another few days. My old man and his brothers and sisters only spoke Cajun French growing up and had to learn English in elementary school, and that's how they and the other families got by. Since most original Acadians (Cajun forerunners) were usually Catholic farmers - usually rice - they tended to have a lot of mouths to feed.

    Crap...now I'm hungry.
