I'm thinking of raising rabbits for meat and this site has the most information on the subject. I know that the rabbits don't have much fat, but if you wrap them in bacon I'm sure they'll do just fine.

I have never tried rabbits raised for meat specifically, how does the flavour compare with wild rabbits?
